Yea, it’s Wednesday.. so what!

Quesadilla Reipce

I’ve started one random tradition in this house already and that’s Taco Tuesday! Taco Tuesday basically consists of a Mexican-inspired dish each Tuesday. This Tuesday (Wednesday) I made quesadillas…DELICIOUS!

I didn’t record prep and cook time this round.. I will next time, but it was REALLY easy and quick!

Quesadilla Recipe


  • Large flour tortillas (they come in packs of 10, but you only need 2)
  • Shredded cheese – either mild or sharp cheddar, or Mexican mix (a cup or so)
  • chopped onion – as much as you like
  • chopped bell pepper – as much as you like
  • mushrooms – as much as you like
  • boneless chicken or shrimp
  • black beans (optional)

Method (I’m not Martha Stewart, so bear with me!)

  1. chop up your onion, bell pepper, and mushrooms
  2. place chopped ingredients in a saucepan and sautee
  3. while that’s sauteing, chop your chicken, shrimp, (or you could skip this step and even do veggie) into bite-sized pieces
  4. add your meat to the veggies, season (I simply used Seasoning Salt and Pepper)
  5. stir in your salsa and black beans
  6. Allow your Fiesta mix to sautee and simmer, I turn it on low so it doesn’t burn
  7. **VERY IMPORTANT** Season to taste – I get some of my best eating done at this time!
  8. once everything is ready, fill your two tortillas
  9. Add shredded cheese on top on the mixture
  10. Place in the oven until melted
I normally serve with rice or refried beans. I made this meal for 2 and it serves dinner and lunch!
I’m sure this isn’t the best picture, but I wanted physical evidence of my yummy treat!
